Here’s a delicious Keto Stuffed Pepper Soup recipe — inspired by stuffed peppers but in a low-carb, creamy soup form. 🌶️🥩🧀


🛒 Ingredients (Serves 4–6)

  • 1 lb (450 g) ground beef or turkey
  • 1 medium onion, diced
  • 2–3 bell peppers, diced (red, green, or yellow)
  • 2 cloves garlic, minced
  • 1 (14 oz / 400 g) can diced tomatoes (no sugar added)
  • 4 cups beef or chicken broth
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste
  • ½ cup shredded cheddar or mozzarella cheese
  • Optional toppings: sour cream, chopped parsley, extra cheese

🍲 Instructions

1. Cook the Meat

  1. In a large pot or Dutch oven, brown the ground beef over medium heat.
  2. Drain excess fat if needed.
  3. Add onion and garlic, sauté until softened.

2. Add Vegetables & Broth

  1. Stir in diced bell peppers, canned tomatoes, broth, Italian seasoning, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer 20–25 minutes until peppers are tender.

3. Finish the Soup

  • Stir in shredded cheese until melted and creamy.
  • Adjust seasoning if needed.

4. Serve

  • Serve hot with optional toppings like sour cream, extra cheese, or fresh herbs.

🍽️ Tips

  • For extra richness, add ¼ cup heavy cream before serving.
  • Swap ground beef for sausage or ground turkey for variety.
  • For a thicker soup, remove a cup of liquid, blend it, and return it to the pot.
