Mashed Potatoes

Ingredients

  • 2 lb potatoes (Yukon Gold or Russet)
  • Salt (for water and seasoning)
  • 4 tablespoons butter
  • ½–¾ cup milk (or cream for extra rich)
  • Black pepper to taste

Instructions

  1. Prep potatoes
    • Peel (optional) and cut into even chunks.
  2. Boil
    • Place potatoes in a pot, cover with cold salted water.
    • Bring to a boil, then simmer 15–20 minutes until fork-tender.
  3. Drain
    • Drain well and return potatoes to the hot pot.
    • Let steam dry for 1–2 minutes.
  4. Mash
    • Add butter and mash.
    • Slowly add warm milk until creamy.
    • Season with salt and pepper.
  5. Serve
    • Serve hot with extra butter on top.
