Instructions

  1. Prepare the filling:
    • Heat olive oil in a pan over medium heat. Sauté onions until soft, ~3 minutes.
    • Add garlic, cook 30 seconds.
    • Add spinach and cook until wilted. Remove from heat.
    • Let cool slightly, then mix in crumbled feta, oregano, salt, and pepper.
  2. Prepare the filo sheets:
    • Keep filo covered with a damp towel (it dries out quickly).
    • Take one sheet, brush lightly with melted butter or olive oil.
    • Fold it lengthwise into 3–4 strips (depending on desired size).
  3. Assemble crisps:
    • Place ~1 tsp of the spinach-feta mixture at one end of a strip.
    • Fold the corner over to make a triangle. Continue folding triangle over itself along the strip until fully wrapped.
    • Repeat with remaining strips and filling.
  4. Bake:
    • Preheat oven to 375°F (190°C).
    • Place crisps on a baking sheet lined with parchment paper.
    • Brush tops lightly with more butter or oil.
    • Bake 15–20 minutes, or until golden brown and crispy.
  5. Serve:
    • Best warm. Optional: drizzle with lemon juice or serve with tzatziki.

💡 Tips for Extra Crispiness:

  • Don’t overfill filo; it can tear.
  • Keep filo covered with a towel until just before baking.
  • You can freeze uncooked triangles and bake later — just add 5 extra minutes to baking time.
