Mojo Potatoes

🥔 Mojo Potatoes (Crispy, Seasoned Potato Wedges)

These are the seasoned, crunchy potato wedges made famous by places like Shakey’s Pizza — fluffy inside, crispy outside, and packed with flavor.


🛒 Ingredients

  • 4 large russet potatoes, scrubbed (leave skin on)
  • 1 cup all-purpose flour
  • 1 tbsp seasoned salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • Oil for frying (vegetable or canola)

👩‍🍳 Instructions

  1. Slice the potatoes
    Cut into thick rounds (about ½-inch slices). Keep them fairly uniform for even cooking.
  2. Soak (optional but recommended)
    Soak slices in cold water for 30 minutes to remove excess starch. Drain and pat very dry.
  3. Prepare coating
    In one bowl: pour buttermilk.
    In another bowl: mix flour, seasoned salt, paprika, garlic powder, and pepper.
  4. Dredge
    Dip each potato slice in buttermilk, then coat well in seasoned flour.
  5. Fry
    Heat oil to 350°F (175°C).
    Fry in batches 4–5 minutes per side until golden brown and crispy.
    Internal temp should be tender when pierced with a fork.
  6. Drain & Season
    Remove to paper towels and sprinkle lightly with extra seasoned salt while hot.

🔥 Oven Version (Healthier Option)

  • Preheat oven to 425°F (220°C).
  • After coating, place on a lined baking sheet.
  • Spray generously with cooking spray or drizzle oil.
  • Bake 25–35 minutes, flipping halfway.

🧀 Serve With

  • Ranch dressing
  • Spicy mayo
  • Cheese sauce
