🥔 Mojo Potatoes (Crispy, Seasoned Potato Wedges)
These are the seasoned, crunchy potato wedges made famous by places like Shakey’s Pizza — fluffy inside, crispy outside, and packed with flavor.
🛒 Ingredients
- 4 large russet potatoes, scrubbed (leave skin on)
- 1 cup all-purpose flour
- 1 tbsp seasoned salt
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp black pepper
- 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
- Oil for frying (vegetable or canola)

- Slice the potatoes
Cut into thick rounds (about ½-inch slices). Keep them fairly uniform for even cooking. - Soak (optional but recommended)
Soak slices in cold water for 30 minutes to remove excess starch. Drain and pat very dry. - Prepare coating
In one bowl: pour buttermilk.
In another bowl: mix flour, seasoned salt, paprika, garlic powder, and pepper. - Dredge
Dip each potato slice in buttermilk, then coat well in seasoned flour. - Fry
Heat oil to 350°F (175°C).
Fry in batches 4–5 minutes per side until golden brown and crispy.
Internal temp should be tender when pierced with a fork. - Drain & Season
Remove to paper towels and sprinkle lightly with extra seasoned salt while hot.

- Preheat oven to 425°F (220°C).
- After coating, place on a lined baking sheet.
- Spray generously with cooking spray or drizzle oil.
- Bake 25–35 minutes, flipping halfway.
