No-Bake Peanut Butter Balls

Ingredients

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 cups Rice Krispies cereal (or crushed graham crackers for crunch)
  • 1 tsp vanilla extract
  • 8 oz chocolate (milk, semi-sweet, or dark), for coating

Instructions

  1. Mix peanut butter & butter in a large bowl until smooth.
  2. Add powdered sugar and vanilla extract, mixing until combined.
  3. Fold in Rice Krispies (or graham crackers) until evenly mixed.
  4. Shape into balls about 1 inch in diameter and place on a parchment-lined tray.
  5. Chill in the fridge for 15–30 minutes so they firm up.
  6. Melt chocolate in a microwave or double boiler until smooth.
  7. Dip each ball in chocolate, then return to the tray.
  8. Chill again until the chocolate hardens (about 15–20 minutes).

Tips / Variations:

  • Roll some in crushed peanuts, sprinkles, or cocoa powder for variety.
  • Use crunchy peanut butter for extra texture.
  • For a simpler version, just skip the chocolate coating—they’re still amazing.
