Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Combine wet and dry: Add dry ingredients alternately with coconut milk, beginning and ending with flour. Stir in drained pineapple.
  5. Bake: Divide batter evenly between pans. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  6. Make frosting: Beat butter until creamy, then gradually add powdered sugar. Add vanilla and coconut milk, beating until smooth.
  7. Assemble cake:
    • Place one cake layer on a plate, spread frosting on top.
    • Add second layer and frost the top and sides.
    • Press shredded coconut onto the sides and top.
  8. Optional: Decorate with pineapple slices or cherries for a tropical look.
