Pistachio Cookies (Easy & Classic)
Ingredients
- 1 cup unsalted pistachios (shelled, roughly chopped)
- 1½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- ¾ cup sugar (or ½ cup white + ¼ cup brown for extra chew)
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 175°C / 350°F. Line a baking tray with parchment paper.
- Mix dry ingredients: flour, baking soda, and salt in a bowl.
- Cream butter & sugar until light and fluffy.
- Add egg and vanilla, mix until combined.
- Stir in dry ingredients until just combined.
- Fold in pistachios.
- Scoop dough (about 1½ tbsp each) onto the tray, spacing them apart.
- Bake 10–12 minutes until edges are lightly golden.
- Let cool on the tray for 5 minutes, then transfer to a rack.
Optional Add-ins
