🥔 Classic Potato Soup (Serves 4)
Ingredients
- 4 medium potatoes, peeled and diced
- 1 small onion, diced
- 2 tbsp butter or oil
- 2 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 1 cup milk (or cream for richer soup)
- Salt and black pepper to taste
Optional add-ins
- Chopped green onions
- Cheese
- Corn or carrots
- A little butter on top
Instructions
- In a pot, melt butter over medium heat.
- Add onion and cook until soft (3–4 minutes).
- Add garlic and cook 30 seconds.
- Add potatoes and broth. Bring to a boil.
- Lower heat and simmer 15–20 minutes until potatoes are very soft.
- Mash some potatoes in the pot (or blend part of the soup).
- Stir in milk, season with salt and pepper. Heat gently—do not boil.
