🥕🥔 Roasted Potatoes and Carrots

Ingredients (serves 4):

  • 4 medium potatoes, cut into chunks
  • 4 carrots, peeled and cut into sticks or rounds
  • 2–3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp rosemary or thyme (optional)
  • 2 cloves garlic, minced (optional)

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Toss potatoes and carrots with olive oil, salt, pepper, herbs, and garlic.
  3. Spread evenly on a baking sheet.
  4. Roast for 35–45 minutes, stirring halfway, until golden and tender.

🥔🥕 Stewed Potatoes and Carrots

Ingredients:

  • 3 potatoes, cubed
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cups vegetable or chicken broth
  • 1 tsp salt, 1/2 tsp pepper
  • 1 tsp paprika or thyme

Instructions:

  1. Sauté onion in a pot until soft.
  2. Add potatoes, carrots, and broth.
  3. Bring to a boil, then simmer 20–25 minutes until veggies are tender.
  4. Season to taste and serve as a warm side dish or base for stew.

You can also toss these in a slow cooker with some garlic, herbs, and butter for a super hands-off version that comes out meltingly soft.
