🥘 Sausage, Green Bean & Potato Casserole

A hearty, one-pan comfort meal that’s easy to prep and full of flavor.

🛒 Ingredients

  • 1 lb smoked sausage (kielbasa or andouille), sliced
  • 1½ lbs baby potatoes, halved
  • 1 lb fresh green beans, trimmed (or 2 cans, drained)
  • 3 tbsp olive oil or melted butter
  • 3–4 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ cup chicken broth (optional, for softer texture)

🔥 Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes and green beans with oil, garlic, and seasonings.
  3. Spread into a greased 9×13 baking dish.
  4. Add sliced sausage evenly on top.
  5. Pour chicken broth around edges (optional).
  6. Cover with foil and bake 30 minutes.
  7. Remove foil and bake another 15–20 minutes until potatoes are fork-tender and slightly browned.

🧀 Optional Add-Ins

  • Shredded cheddar or mozzarella (add last 10 minutes)
  • Diced onion or bell peppers
  • Red pepper flakes for heat
  • Sprinkle of Parmesan before serving
