Here’s an easy, sheet pan meatloaf that cooks faster than a traditional loaf and gets great caramelized edges 🍽️
Sheet Pan Meatloaf
Ingredients
Meatloaf
- 1½ lb ground meat (beef, or beef/pork mix)
- 1 cup breadcrumbs or crushed crackers
- 2 eggs
- ½ cup milk
- ½ onion, finely diced
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 1 tbsp Worcestershire sauce
- ⅓ cup ketchup
Topping
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard (optional)
Instructions
- Heat oven
Preheat to 400°F (205°C). Line a sheet pan with parchment or foil. - Mix meatloaf
In a large bowl, combine all meatloaf ingredients. Mix gently (don’t overwork). - Shape
Form into a wide, flat loaf (about 1½–2 inches thick) directly on the sheet pan. - Top it
Mix topping ingredients and spread evenly over the loaf. - Bake
Bake 30–40 minutes, until internal temp reaches 160°F (71°C). - Rest & slice
Let rest 5 minutes before slicing.
Optional Sheet-Pan Add-Ons
You can cook sides at the same time:
- Potatoes (cubed, oiled, salted) – start them 10 minutes earlier
- Green beans or carrots – add halfway through
Tips
- Flattening the loaf = faster cook + crispy edges
- For extra flavor, add cheese or BBQ sauce
- Line the pan well—there will be juices
