Shirred Eggs
Ingredients (for 2 servings)
- 2–4 large eggs
- 2 tablespoons butter
- 2–4 tablespoons heavy cream or milk
- Salt and pepper to taste
- Optional toppings: shredded cheese, herbs (chives, parsley), cooked bacon, spinach, or mushrooms
Instructions
- Prep oven
- Preheat oven to 375°F (190°C).
- Grease small ramekins with butter.
- Assemble
- Place 1–2 tablespoons butter in each ramekin.
- Crack one or two eggs into each ramekin.
- Add 1–2 tablespoons of cream around the eggs.
- Season with salt and pepper.
- Add optional toppings like cheese or herbs.
- Bake
- Place ramekins in a baking dish.
- Add hot water to the baking dish so it reaches halfway up the sides of the ramekins (optional, for gentler cooking).
- Bake 12–15 minutes until whites are set but yolks are still slightly soft.
- Serve
- Carefully remove ramekins and serve immediately with toast or crusty bread.
Tips
- For firmer yolks, bake 1–2 minutes longer.
- Add cooked veggies or smoked salmon for extra flavor.
- The water bath (bain-marie) helps eggs cook evenly and stay creamy.
