Sizzling Scallops with Zesty Lime Cilantro Sauce

Ingredients

Scallops

  • 1 lb sea scallops (patted very dry)
  • Salt & black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter

Zesty Lime Cilantro Sauce

  • ¼ cup fresh cilantro, finely chopped
  • Zest of 1 lime
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 1 small garlic clove, minced
  • Pinch of salt
  • Optional: tiny pinch of chili flakes (for mild heat)

Instructions

  1. Prepare the sauce
    Mix cilantro, lime zest, lime juice, olive oil, garlic, and salt. Set aside so flavors blend.
  2. Season scallops
    Lightly season both sides with salt and pepper.
  3. Heat the pan
    Heat a heavy skillet (cast iron works best) over medium-high heat until very hot.
  4. Sear scallops
    Add olive oil and butter. When shimmering, add scallops in a single layer.
    Sear 2–3 minutes per side without moving until a deep golden crust forms.
  5. Finish & serve
    Remove scallops from heat and spoon the lime cilantro sauce over the top.
