Slow Cooker Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs if you prefer)
  • 1 cup chicken broth
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme (or Italian seasoning)
  • ½ tsp salt, ¼ tsp black pepper
  • Optional: 1 cup chopped carrots, 1 cup potatoes, or other veggies

Instructions:

  1. Place the sliced onions and garlic at the bottom of the slow cooker.
  2. Season the chicken with paprika, thyme, salt, and pepper. Place on top of the onions.
  3. Pour the chicken broth over everything.
  4. Add any veggies you like around the chicken.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked.
  6. Optional: For a thicker sauce, remove the chicken and stir in 1–2 tsp of cornstarch mixed with water into the liquid and cook for 10–15 minutes on high.

Serving suggestion: Serve over rice, mashed potatoes, or with a side of roasted veggies.
