Slow Cooker Pepper Steak
Ingredients
- 1Β½β2 lb beef sirloin or flank steak, thinly sliced
- 2 bell peppers (any color), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- ΒΎ cup beef broth
- β cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground ginger (or fresh, if you have it)
- Black pepper to taste
Instructions
- Prep beef
- Place sliced beef in the slow cooker.
- Add veggies
- Add bell peppers, onion, and garlic on top.
- Make sauce
- Whisk broth, soy sauce, brown sugar, ginger, black pepper, and cornstarch.
- Pour over everything.
- Cook
- Cover and cook:
- Low: 6β7 hours
- High: 3β4 hours
- Stir once if possible.
- Cover and cook:
- Serve
- Serve hot over rice or noodles.
Tips
- Slice beef against the grain for tenderness.
- For thicker sauce, stir and let cook uncovered 10β15 minutes at the end.
- Add mushrooms if you like.
