Slow Cooker Pineapple Pork

Ingredients

  • 2–3 lb pork loin or pork shoulder (boneless)
  • 1 can (20 oz) pineapple chunks with juice
  • ½ cup soy sauce (or low-sodium)
  • ½ cup brown sugar (or honey)
  • 3 cloves garlic, minced
  • 1 Tbsp fresh ginger (or 1 tsp ground ginger)
  • 2 Tbsp ketchup or hoisin sauce (optional, for richness)
  • 1 Tbsp rice vinegar or apple cider vinegar
  • 1 Tbsp cornstarch + 2 Tbsp water (optional, to thicken)
  • Optional veggies: bell peppers, onion slices, carrots

Instructions

  1. Prep pork
    Place pork in the slow cooker (whole or cut into large chunks).
  2. Make sauce
    In a bowl, whisk pineapple (with juice), soy sauce, brown sugar, garlic, ginger, ketchup/hoisin, and vinegar.
  3. Cook
    Pour sauce over pork. Add veggies if using.

    • Low: 7–8 hours
    • High: 4–5 hours
      Cook until pork is very tender.
  4. Shred or slice
    Remove pork, shred or slice, then return to the slow cooker.
  5. Optional thickening
    Stir in cornstarch slurry, cover, and cook on HIGH 10–15 minutes until sauce thickens.
  6. Serve
    Over rice, quinoa, or in lettuce wraps. Spoon extra sauce on top.

Easy Variations

  • Hawaiian style: Add bell peppers and red onion
  • Spicy: Add red pepper flakes or a little sriracha
  • Teriyaki twist: Replace ketchup with teriyaki sauce
  • Low-sugar: Use sugar-free pineapple juice and reduce sweetener
