Strawberry Crunch Dessert Bars

Ingredients

For the Crust & Topping:

  • 1/2 tsp vanilla extract
  • Pinch of salt

For the Strawberry Filling:

  • 2 cups fresh strawberries, chopped (or frozen, thawed)
  • 1/4 cup (50 g) granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Instructions

  1. Preheat Oven: 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Make Crust:
    • Mix flour, sugar, melted butter, vanilla, and salt until crumbly.
    • Press half of the mixture firmly into the bottom of the prepared pan.
  3. Prepare Filling:
    • In a small saucepan, combine strawberries, sugar, cornstarch, and lemon juice.
    • Cook over medium heat until thickened, stirring frequently. Cool slightly.
  4. Assemble Bars:
    • Spread strawberry filling evenly over the crust.
    • Sprinkle remaining crumb mixture over the top for that “crunch” layer.
  5. Bake:
    • Bake 30–35 minutes, or until topping is golden brown and filling is bubbly.
  6. Cool & Serve:
    • Let cool completely (or refrigerate for firmer bars).
    • Cut into squares and enjoy! Optional: drizzle with white chocolate or dust with powdered sugar.
