Ah, a Strawberry Tart—fresh, sweet, and perfect for spring or summer desserts! 🍓🥧 Here’s a classic recipe:


Strawberry Tart

Ingredients (8 servings)

For the crust:

  • 1 1/4 cups (160 g) all-purpose flour
  • 1/2 cup (115 g) unsalted butter, cold and cubed
  • 1/4 cup (50 g) sugar
  • 1/4 tsp salt
  • 1 egg yolk
  • 1–2 tbsp cold water

For the filling:

  • 1 cup (240 ml) heavy cream
  • 4 oz (115 g) cream cheese, softened
  • 1/4 cup (50 g) sugar
  • 1 tsp vanilla extract

For the topping:

  • 1 pint fresh strawberries, hulled and halved
  • Optional: apricot glaze or melted jam to brush on top for shine

Instructions

  1. Make the crust:
    • Preheat oven to 350°F / 175°C.
    • In a food processor or by hand, combine flour, sugar, and salt.
    • Cut in butter until mixture resembles coarse crumbs.
    • Mix in egg yolk and 1–2 tbsp water until dough comes together.
    • Press dough into a tart pan (9-inch) evenly.
    • Bake 15–20 minutes until lightly golden. Let cool completely.
  2. Prepare the filling:
    • Beat cream cheese, sugar, and vanilla until smooth.
    • Whip heavy cream until soft peaks form, then fold into cream cheese mixture.
    • Spread filling evenly over cooled crust.
  3. Arrange strawberries:
    • Place halved strawberries on top of the filling in a decorative pattern.
  4. Add glaze (optional):
    • Warm 2–3 tbsp apricot jam and brush lightly over strawberries for shine and extra sweetness.
  5. Chill and serve:
    • Refrigerate at least 1 hour before serving. Slice and enjoy!

Pro tips:

  • Use ripe, firm strawberries for best flavor and appearance.
  • You can swap the cream cheese filling for pastry cream or mascarpone cream for a richer tart.
  • For a crunchier crust, sprinkle a little sugar on the tart base before baking.
