Thyme Potatoes

Ingredients

  • 1 kg (2 lb) potatoes, peeled or scrubbed
  • 3 tbsp olive oil or melted butter
  • 2–3 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2–3 cloves garlic, minced (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Prep potatoes
    • Cut potatoes into even chunks (about 2–3 cm / 1-inch pieces) so they cook evenly.
    • Pat dry to help them crisp.
  3. Season
    • Toss potatoes with olive oil, thyme, garlic (if using), salt, and pepper. Make sure everything is coated.
  4. Roast
    • Spread in a single layer on a baking sheet.
    • Roast 35–45 minutes, flipping halfway, until golden brown and crispy.
  5. Serve
    • Optional: sprinkle extra fresh thyme or a little grated Parmesan on top for extra flavor.

Tips

  • For extra crispiness, boil potato chunks 5 minutes before roasting, then drain and dry.
  • Mix in other herbs like rosemary or parsley for variety.
  • Works well with sweet potatoes too—just reduce roasting time slightly.
